Saganaky shrimps
Saganaky shrimps is amongst one of my favourite dishes. It is a recent recipe and the name derives from the serving dish.
-1 kg of shrimps
-250 g feta cheese
-1 cup of olive oil
-4 fresh tomatoes
-2 finely chopped onions
-1 medium green pepper
-1 cup of minced parsley
-salt & pepper
Peel the tomatoes, dice them up and put them in a mincing machine.
Heat up the oil in a saucepan, add the onion, garlic, pepper, and simmer with the tomatoes, salt & pepper for a few minutes. Place the shrimps in a pan; fry them up briefly with a drop of oil without the shells. Then place them in an over dish or in an oven ware dish and cover with the sauce. Add the parsley and strips of feta cheese. Cook in a hot oven for 30 mins.
