I wish to dedicate this section to Greek food. Although there is no comparison with Italian food, I can assure you that you won’t starve. In time I will supply you with more recipes even with the help of some other readers. I hope you will find their recipes appetizing!
Mousakà
Cooking time 40min.+30min. in the oven
2 kg aubergines
-1 kg mince meat
-1/2 cup of olive oil
-2 large onions
-5 red tomatoes
-1/2 cup of white wine
-salt & pepper
-grated kefalotiri cheese (you can substitute it with pecorino cheese)
-cooking oil
-plenty of besciamel sauce

wash the aubergines and cut into slices, sprinkle with salt and leave to drip in a colander, simmer the mince meat with olive oil and sliced onions , at the end add the wine , sliced tomatoes, salt & pepper and cook gently until it thickens.
Then fry the aubergines in cooking oil. Place them in a large baking tin and cover with the rest of the aubergines. At the end add more cheese and finally cover with plenty of besciamel sauce, add more grated cheese and cook in the oven for 30mins.
